A Salted Butter Caramel Roll is a delectable pastry that combines the rich, creamy sweetness of caramel with a hint of salt, wrapped in soft, fluffy dough. Imagine a swirl of buttery brioche or cinnamon roll dough filled with luscious caramel sauce, often made from a blend of sugar, butter, and cream, enhanced with a touch of salt to balance the sweetness.
As the roll bakes, the caramel melts, infusing the bread with its sweet-salty flavor.
After it's out of the oven, it might be drizzled with more caramel sauce or a glaze, offering a sticky, indulgent treat that's perfect for breakfast, brunch, or dessert. The contrast of the gooey caramel and the light, tender dough makes every bite a delightful balance of textures and flavors.
- Ingredients :
For the biscuit:
75g sugar + 1 tbsp
25g melted butter
4 egg yolks
3 egg whites
75g flour
Salted Butter Caramel
50g sugar
15g semi-salted butter
5cl liquid crème fraîche
For decoration
Powdered sugar and caramel
- Preparation
To make a biscuit, whisk the egg yolks and sugar in a bowl until the mixture turns white.
Add the flour and mix.
Beat the egg whites until stiff and add the tablespoon of sugar halfway through.
Then pour the butter and egg whites into stiff peaks, together on the previous mixture, gently fold everything in.
Spread a baking sheet with baking paper and pour the biscuit mixture on it, and spread the surface well.
Bake in a preheated oven for about 7 minutes at 240°C with fan-assisted heat.
Remove the baking tray from the oven and turn the biscuit over onto a clean, dry cloth and gently roll it up on itself, and squeeze well.
Leave to cool aside
To prepare the caramel, put the sugar in a saucepan over low heat
When it starts to brown, add the semi-salted butter, stirring briskly.
Remove from the heat, then add the previously warmed cream, and put everything back on the heat and stir to thicken the caramel slightly.
Then place the caramel in the refrigerator to thicken further.
Unroll the biscuit, then spread it with the caramel, reserving 1/4 of the caramel for decoration. Roll everything up carefully and cut off both ends of the log.
Sprinkle with powdered sugar and decorate with the remaining caramel
Chill.
Here are some helpful tips for making Salted Butter Caramel Rolls :
1. Use High-Quality Butter
Since butter is a key ingredient in both the dough and caramel, opt for high-quality, unsalted butter in the dough and salted butter in the caramel for a richer flavor.
2. Don’t Overmix the Dough
Be careful not to overwork the dough when kneading. Overmixing can result in tough rolls. You want the dough to be soft and slightly sticky.
3. Proof the Dough Properly
Allow the dough to rise in a warm environment until it has doubled in size. This will give the rolls their soft and airy texture. Rushing this step can lead to denser rolls.
4. Make a Perfect Caramel
To make the caramel, cook sugar, butter, and cream until golden brown. Stir continuously and be patient—overcooking can make it too bitter, and undercooking can leave it too runny.
5. Balance the Salt
Adding a pinch of sea salt to the caramel balances the sweetness. Taste as you go to make sure the salt enhances the flavor without overpowering it.
6. Spread the Caramel Evenly
When spreading the caramel on the dough before rolling, ensure it is evenly distributed so every bite has the perfect mix of caramel. Be careful not to overfill, as this can cause the caramel to leak out during baking.
7. Cut Rolls Evenly
Use a sharp knife or dental floss (unflavored) to cut the dough into rolls to maintain their shape without squashing them.
8. Bake Until Golden
Bake the rolls until they are golden brown and puffy, checking after the suggested baking time to avoid overbaking, which can dry out the dough.
9. Add Extra Caramel Topping
For an extra indulgent finish, drizzle more caramel sauce or glaze over the top of the rolls once they’ve cooled slightly.
10. Serve Warm
Salted Butter Caramel Rolls are best served warm to fully enjoy the gooey caramel and soft texture. You can reheat leftovers briefly to restore their freshness.
