A Salted Butter Caramel Roll is a delectable pastry that combines the rich, creamy sweetness of caramel with a hint of salt, wrapped in soft, fluffy dough. Imagine a swirl of buttery brioche or cinnamon roll dough filled with luscious caramel sauce, often made from a blend of sugar, butter, and cream, enhanced with a touch of salt to balance the sweetness.

- Ingredients :


For the biscuit:

75g sugar + 1 tbsp

25g melted butter

4 egg yolks

3 egg whites

75g flour


Salted Butter Caramel

50g sugar

15g semi-salted butter

5cl liquid crème fraîche


For decoration

Powdered sugar and caramel


- Preparation


To make a biscuit, whisk the egg yolks and sugar in a bowl until the mixture turns white.

Add the flour and mix.

Beat the egg whites until stiff and add the tablespoon of sugar halfway through.

Then pour the butter and egg whites into stiff peaks, together on the previous mixture, gently fold everything in.

Spread a baking sheet with baking paper and pour the biscuit mixture on it, and spread the surface well.

Bake in a preheated oven for about 7 minutes at 240°C with fan-assisted heat.

Remove the baking tray from the oven and turn the biscuit over onto a clean, dry cloth and gently roll it up on itself, and squeeze well.

Leave to cool aside

To prepare the caramel, put the sugar in a saucepan over low heat

When it starts to brown, add the semi-salted butter, stirring briskly.

Remove from the heat, then add the previously warmed cream, and put everything back on the heat and stir to thicken the caramel slightly.

Then place the caramel in the refrigerator to thicken further.

Unroll the biscuit, then spread it with the caramel, reserving 1/4 of the caramel for decoration. Roll everything up carefully and cut off both ends of the log.

Sprinkle with powdered sugar and decorate with the remaining caramel
