6 cups low-sodium chicken broth

2 carrots, peeled and diced

2 ribs celery, diced

1 onion, finely chopped

1/2 teaspoon garlic powder

1 (1.0 oz.) package dry ranch seasoning mix

1 (10.75 oz.) can condensed cheddar cheese or cream of chicken soup

2/3 cup uncooked white rice

1 1/2 teaspoons Italian seasoning

1/2 teaspoon paprika

real bacon bits, garnish, optional

2 tablespoons extra-virgin olive oil

kosher salt and freshly ground pepper, to taste

- How To Make Ranch Chicken Rice Soup

Heat olive oil in a large stock pot or Dutch oven over medium-high heat and sauté onion, carrot and celery for 8-10 minutes, or until softened.

Season with salt and pepper, Italian seasoning, ranch seasoning and paprika.

Add garlic and cook for another 1-2 minutes, or until fragrant, then stir in chicken broth and condensed soup.

Stir in chicken and rice, then bring to a boil. Reduce heat to a simmer, cover and cook for 15-20 minutes, or until rice is fully cooked.

Add bacon bits, then taste and adjust seasoning, if desired. Serve hot.

Here are some tips for making the best Ranch Chicken Rice Soup:

Use Rotisserie Chicken: For a quicker meal, use pre-cooked rotisserie chicken. It adds extra flavor and cuts down on cooking time.

Sauté the Vegetables First: To add depth to your soup, sauté onions, carrots, and celery before adding the broth. It enhances the flavors of the vegetables.

Add Rice Last: If you’re using cooked rice, add it near the end to prevent it from getting mushy. For uncooked rice, adjust the cooking time to allow it to cook through but not overcook.

Choose Your Ranch Seasoning Wisely: Use a ranch seasoning packet or make a homemade version. Adjust the amount to your taste to avoid overpowering the soup.

Creamy Twist: Add a splash of heavy cream or half-and-half for a richer, creamier texture. Greek yogurt is a good lighter alternative.

Garnish with Fresh Herbs: For extra freshness, garnish with chopped parsley, chives, or green onions. This adds a bright touch to each bowl.

Make It Ahead: This soup tastes even better the next day as the flavors meld together. Just reheat gently on the stovetop and add a bit of extra broth if it thickens.

Add Some Crunch: Top with crushed crackers or crispy bacon bits for added texture and flavor right before serving.
