Avocado & Tomato Bruschetta is a modern twist on the classic Italian appetizer, offering a fresh and flavorful combination that's both healthy and delicious.

This dish features ripe avocado and juicy tomatoes, diced and mixed with garlic, basil, and a splash of olive oil.

The mixture is then spooned onto slices of toasted baguette, creating a perfect blend of creamy and crunchy textures.

The richness of the avocado complements the acidity of the tomatoes, while the garlic and basil add depth and fragrance.

This bruschetta is an excellent choice for a light snack, an elegant appetizer, or a party starter.


- Ingredients :


4 slices of crusty sourdough bread

2 ripe avocados

1 clove garlic, peeled

200g mixed cherry tomatoes, halved

1 tbsp extra virgin olive oil, plus extra for drizzling

A squeeze of fresh lemon juice

Salt and freshly ground black pepper, to taste

A small handful of fresh basil, finely chopped


- Method :


1. Toast the sourdough slices until they're golden and crispy. Rub one side of each slice with the garlic clove for a subtle flavour.


2. In a bowl, mash the avocados with a fork. Stir in half of the olive oil, a squeeze of lemon juice, and season with salt and pepper to taste.



3. Spread the mashed avocado generously over the toasted sourdough slices.


4. Top each slice with a portion of the cherry tomatoes. Drizzle the remaining olive oil over the tomatoes and add a final seasoning of salt and pepper.


5. Garnish with the freshly chopped basil and an extra drizzle of olive oil for a glossy finish.
